Fried Egg and Cabbage Sandwich

Ingredients:

- 2 eggs
- 1 tomato, diced
- 1/4 teaspoon salt
- 1/4 onion, diced
- 1 garlic clove, minced
- 1/4 teaspoon black pepper
- 2 slices of bread
- 1/4 teaspoon oregano
- 1/4 head of cabbage, shredded

Instructions:

1. Heat a large skillet over medium-high heat.

2. Add the eggs and scramble until cooked through.

3. Add the tomato, salt, onion, garlic, and pepper and cook for 2 minutes.

4. Add the cabbage and oregano and cook for an additional 2 minutes.

5. Toast the bread in a toaster or on the skillet.

6. Place the egg and cabbage mixture on one slice of bread and top with the other slice.

7. Enjoy!
