Fried Rice
Ingredients:
- 2 cups of cooked rice
- 2 tablespoons of vegetable oil
- 1/2 cup of diced onions
- 1/2 cup of diced bell peppers
- 1/2 cup of diced carrots
- 1/2 cup of frozen corn
- 2 eggs, lightly beaten
- 2 tablespoons of soy sauce
- Salt and pepper, to taste
Instructions:
1. Heat the vegetable oil in a large skillet over medium heat.
2. Add the onions, bell peppers, and carrots and cook until softened, about 5 minutes.
3. Add the frozen corn and cook for another 2 minutes.
4. Push the vegetables to the side of the skillet and add the beaten eggs. Scramble the eggs until cooked through.
5. Add the cooked rice and soy sauce and stir to combine.
6. Season with salt and pepper, to taste.
7. Serve warm. Enjoy!
