Fried Rice
Ingredients:
-2 cups cooked rice
-1 cup cooked, diced chicken
-2 eggs, lightly beaten
-1/2 onion, diced
-2 cloves garlic, minced
-1 bell pepper, diced
-2 tablespoons vegetable oil
-Salt and pepper, to taste
Instructions:
1. Heat the vegetable oil in a large skillet over medium-high heat.
2. Add the onion, garlic, and bell pepper and cook until the vegetables are softened, about 5 minutes.
3. Add the chicken and cook until heated through, about 3 minutes.
4. Add the cooked rice and stir to combine.
5. Push the rice mixture to one side of the skillet and add the eggs to the other side. Scramble the eggs until cooked through.
6. Mix the eggs into the rice mixture and season with salt and pepper, to taste.
7. Cook, stirring occasionally, until the rice is heated through, about 5 minutes.
8. Serve hot. Enjoy!
