Fried Rice
Ingredients:
- 2 cups cooked white rice
- 1 cup cooked chicken, diced
- 1/2 onion, diced
- 2 eggs
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the diced onion and cook until softened, about 5 minutes.
3. Add the diced chicken and cook until lightly browned, about 5 minutes.
4. Add the cooked rice and stir to combine.
5. Push the rice and chicken to one side of the skillet and crack the eggs into the other side.
6. Scramble the eggs until cooked through, about 2 minutes.
7. Combine the eggs with the rice and chicken and stir to combine.
8. Season with salt and pepper to taste.
9. Serve hot. Enjoy!
