Fried Rice with Chicken

Ingredients:

- 2 tablespoons of oil
- 2 chicken breasts, cut into cubes
- 2 onions, diced
- 2 capsicums, diced
- 2 garlic cloves, minced
- 200g of rice
- 2 eggs
- 1 pinch of salt
- 2 tablespoons of chopped spring onion

Instructions:

1. Heat the oil in a large skillet over medium-high heat.

2. Add the chicken cubes and cook for about 5 minutes until golden brown.

3. Add the onions, capsicums and garlic and cook for another 3 minutes.

4. Add the rice and stir to combine.

5. Crack the eggs into the skillet and stir to combine.

6. Add the salt and stir to combine.

7. Cook for about 10 minutes, stirring occasionally, until the rice is cooked through.

8. Add the spring onion and stir to combine.

9. Serve hot. Enjoy!
