Fried Rice with Chicken and Eggs

Ingredients:

- 2 cups cooked white rice

- 2 boneless, skinless chicken breasts, diced

- 2 eggs, lightly beaten

- 1 tomato, diced

- 2 tablespoons vegetable oil

- 2 cloves garlic, minced

- 2 tablespoons soy sauce

- Salt and pepper, to taste

Instructions:

1. Heat the vegetable oil in a large skillet over medium-high heat.

2. Add the chicken and cook until lightly browned, about 5 minutes.

3. Add the garlic and cook for another minute.

4. Add the rice and stir to combine.

5. Push the rice to one side of the pan and pour the eggs onto the other side.

6. Scramble the eggs until cooked through, about 2 minutes.

7. Add the tomato and soy sauce, stirring to combine.

8. Season with salt and pepper, to taste.

9. Serve hot. Enjoy!
