**Fried Rice with Chicken and Eggs**

**Ingredients:**
- 2 cups cooked rice
- 1 chicken breast, diced
- 2 eggs, beaten
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 1/2 cup mixed vegetables (peas, carrots, corn)
- 2 cloves garlic, minced
- Salt and pepper to taste
- Green onions for garnish

**Instructions:**
1. Heat vegetable oil in a large skillet or wok over medium-high heat.
2. Add diced chicken breast and cook until browned and cooked through.
3. Push the chicken to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked.
4. Add minced garlic to the skillet and sauté for 1 minute until fragrant.
5. Add the mixed vegetables and stir-fry for another 2-3 minutes.
6. Add the cooked rice to the skillet and stir to combine with the chicken, eggs, and vegetables.
7. Pour soy sauce over the rice and mix well to evenly distribute the sauce.
8. Season with salt and pepper to taste.
9. Cook for an additional 2-3 minutes, stirring frequently.
10. Remove from heat and garnish with chopped green onions before serving.
