Fried Rice with Chicken and Vegetables
Ingredients:
- 2 cups cooked white rice
- 1/2 lb ground chicken
- 2 eggs
- 1/2 cup diced vegetables (carrots, celery, onions, etc.)
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions:
1. Heat the vegetable oil in a large skillet over medium-high heat.
2. Add the ground chicken and cook until it is no longer pink, about 5 minutes.
3. Add the diced vegetables and cook until they are tender, about 3 minutes.
4. Push the chicken and vegetables to one side of the skillet and add the eggs. Scramble the eggs until they are cooked through.
5. Add the cooked rice to the skillet and mix everything together.
6. Season with salt and pepper to taste.
7. Serve hot. Enjoy!
