Fried Rice with Cucumber and Egg

Ingredients:
2 cups cooked rice
2 eggs
1 cucumber, diced
2 tablespoons olive oil
Salt and pepper, to taste

Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the eggs and scramble until cooked through.

3. Add the diced cucumber and cook for 2-3 minutes, stirring occasionally.

4. Add the cooked rice and stir to combine.

5. Season with salt and pepper, to taste.

6. Cook for an additional 3-4 minutes, stirring occasionally, until the rice is heated through.

7. Serve warm. Enjoy!
