Fried Rice with Peas
Ingredients:
- 2 tablespoons vegetable oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tomato, diced
- 1 cup frozen peas, thawed
- 2 cups cooked white rice
- 4 eggs, lightly beaten
- Salt and pepper to taste
Instructions:
1. Heat the oil in a large skillet over medium heat.
2. Add the onion and garlic and cook until softened, about 5 minutes.
3. Add the tomato and peas and cook for another 5 minutes.
4. Add the cooked rice and stir to combine.
5. Make four wells in the rice mixture and pour the beaten eggs into each one.
6. Cook, stirring occasionally, until the eggs are cooked through and the rice is heated through, about 5 minutes.
7. Season with salt and pepper to taste and serve.
