Fried Rice with Peperoni and Vegetables
Ingredients:
- 2 cups of cooked white rice
- 2 stalks of celery, diced
- 1 leek, diced
- 1/4 cup of peperoni, diced
- 1/2 teaspoon of chilli flakes
- 1 tomato, diced
- 2 carrots, diced
- 2 eggs
- 2 tablespoons of vegetable oil
Instructions:
1. Heat the vegetable oil in a large frying pan over medium-high heat.
2. Add the celery, leek, peperoni, chilli flakes, tomato and carrots to the pan and cook for 3-4 minutes, stirring occasionally.
3. Add the cooked rice to the pan and mix everything together.
4. Push the rice and vegetables to one side of the pan and crack the eggs into the other side.
5. Scramble the eggs and mix them into the rice and vegetables.
6. Cook for a further 3-4 minutes, stirring occasionally, until everything is cooked through.
7. Serve the fried rice with peperoni and vegetables hot. Enjoy!
