Fried Rice with Shallots and Eggs

Ingredients:

- 2 tablespoons vegetable oil
- 2 shallots, finely chopped
- 2 cups cooked white rice
- 2 eggs, lightly beaten
- 2 tablespoons chopped fresh cilantro
- Salt and pepper, to taste

Instructions:

1. Heat the oil in a large skillet over medium-high heat.

2. Add the shallots and cook until softened, about 2 minutes.

3. Add the cooked rice and stir to combine. Cook for 2 minutes, stirring occasionally.

4. Push the rice to the sides of the skillet and pour in the beaten eggs. Cook until the eggs are just set, about 1 minute.

5. Stir the eggs into the rice and season with salt and pepper.

6. Stir in the cilantro and cook for an additional minute.

7. Serve hot. Enjoy!
