Make Fried Rice with Vegetables

Fried Rice with Vegetables

Ingredients:

- 2 cups cooked white rice
- 2 tomatoes, diced
- 1 leek, diced
- 1 onion, diced
- 2 eggs, lightly beaten
- 1 zucchini, diced
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the leek, onion, and zucchini and cook for 3-4 minutes, stirring occasionally, until the vegetables are softened.

3. Add the tomatoes and cook for an additional 2 minutes.

4. Add the cooked rice and stir to combine.

5. Push the rice and vegetables to the side of the skillet and add the eggs. Scramble the eggs until cooked through.

6. Stir the eggs into the rice and vegetables.

7. Season with salt and pepper to taste.

8. Serve hot. Enjoy!
