Arroz con Pollo y Frijoles
Ingredients:
- 2 cups of long grain white rice
- 2 tablespoons of olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 cups of cooked black beans
- 2 cups of cooked chicken, shredded
- 2 cups of chicken broth
- 1 teaspoon of ground cumin
- 1 teaspoon of dried oregano
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the onion and garlic and cook until the onion is softened and translucent, about 5 minutes.
3. Add the rice and stir to coat in the oil.
4. Add the beans, chicken, chicken broth, cumin, oregano, salt, and pepper.
5. Bring to a boil, reduce the heat to low, and cover.
6. Simmer for 20 minutes, or until the rice is cooked through and the liquid is absorbed.
7. Fluff with a fork and serve.
