Frittata di Verdure
Ingredients:
- 2 cups of broccoli, chopped
- 2 carrots, peeled and chopped
- 2 onions, chopped
- 2 potatoes, peeled and chopped
- 6 eggs
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. Preheat oven to 375°F.
2. Heat the olive oil in a large skillet over medium heat.
3. Add the onions, carrots, and potatoes and cook until softened, about 5 minutes.
4. Add the broccoli and cook for an additional 3 minutes.
5. In a large bowl, whisk together the eggs and season with salt and pepper.
6. Add the cooked vegetables to the egg mixture and stir to combine.
7. Pour the mixture into a greased 9-inch baking dish.
8. Bake for 25-30 minutes, or until the top is golden brown and the center is set.
9. Let cool for 5 minutes before serving. Enjoy!
