Fruity Coconut Pie

Ingredients:

- 2 cups of all-purpose flour
- 1/2 cup of fat (butter, margarine, or vegetable shortening)
- 1/4 cup of cold water
- 1/4 cup of sugar
- 1 cup of blueberries
- 1 cup of diced pears
- 1/2 cup of blackberries
- 1/2 cup of plums
- 1/4 cup of honey
- 1/4 cup of milk
- 1 teaspoon of lemon zest
- 2 tablespoons of lime juice
- 1/2 teaspoon of cinnamon powder
- 1/4 teaspoon of salt
- 1/2 cup of graham cracker crumbs
- 2 tablespoons of chopped fresh mint leaves
- 1 cup of coconut whipped cream
- 1 pie tray

Instructions:

1. Preheat the oven to 375°F.

2. In a large bowl, mix together the flour, fat, and cold water until a dough forms.

3. Roll out the dough onto a lightly floured surface and transfer to the pie tray.

4. In a separate bowl, mix together the sugar, blueberries, diced pears, blackberries, plums, honey, milk, lemon zest, lime juice, cinnamon powder, and salt.

5. Pour the fruit mixture into the pie tray and spread evenly.

6. Sprinkle the graham cracker crumbs and chopped mint leaves over the top.

7. Bake for 30 minutes, or until the crust is golden brown.

8. Let the pie cool for at least 15 minutes before serving.

9. Serve with a dollop of coconut whipped cream. Enjoy!
