Fussili with Chicken and Onion
Ingredients:
- 1 onion, diced
- 1 lb. chicken breast, cut into cubes
- 2 cups fussili
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon dried oregano
- Salt and pepper, to taste
- 1/2 cup chicken broth
- 1/4 cup freshly grated Parmesan cheese
Instructions:
1. In a large pot, bring 4 cups of water to a boil. Add the fussili and cook according to package instructions. Drain and set aside.
2. Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
3. Add the chicken and cook until golden brown, about 5 minutes.
4. Add the garlic, oregano, salt, and pepper and cook for 1 minute.
5. Add the chicken broth and simmer for 5 minutes.
6. Add the cooked fussili to the skillet and toss to combine.
7. Sprinkle with Parmesan cheese and serve. Enjoy!
