Vegetable Fried Rice

Ingredients:

- 2 cups cooked rice
- 2 eggs
- 1 carrot, diced
- 1 onion, diced
- 1 tomato, diced
- 2 tablespoons tomato ketchup
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala

Instructions:

1. Heat a large skillet over medium-high heat.

2. Add the eggs and scramble until cooked through. Remove from the pan and set aside.

3. Add the carrot, onion, and tomato to the skillet and cook until softened, about 5 minutes.

4. Add the cooked rice, tomato ketchup, turmeric powder, and garam masala. Stir to combine.

5. Add the scrambled eggs back to the skillet and stir to combine.

6. Cook for an additional 5 minutes, stirring occasionally.

7. Serve hot. Enjoy!
