Chicken Tomato Pasta
Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 boneless, skinless chicken breasts, cubed
- 1 red bell pepper, diced
- 1 large tomato, diced
- 1/2 cup uncooked white rice
- 2 cups chicken broth
- 1/2 teaspoon dried oregano
- 1/4 teaspoon black pepper
- 8 ounces uncooked pasta
- 2 eggs, lightly beaten
Instructions:
1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
2. Add the chicken and bell pepper and cook until the chicken is cooked through, about 5 minutes.
3. Add the tomato, rice, chicken broth, oregano, and black pepper. Bring to a boil, reduce the heat to low, and simmer for 15 minutes.
4. Add the pasta and cook until al dente, about 8 minutes.
5. Add the eggs and stir until combined. Serve hot.
