Tuna Fried Rice
Ingredients:
- 2 cups cooked rice
- 1 can of tuna, drained
- 1 red pepper, diced
- 1 yellow pepper, diced
- 2 eggs, beaten
- 1/4 cup fennel, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the garlic and fennel and cook until fragrant, about 1 minute.
3. Add the red and yellow peppers and cook until softened, about 5 minutes.
4. Add the tuna and cook for another 2 minutes.
5. Add the cooked rice and stir to combine.
6. Push the rice to one side of the skillet and add the beaten eggs. Scramble the eggs until cooked through.
7. Stir the eggs into the rice and season with salt and pepper to taste.
8. Serve hot. Enjoy!
