Spinach and Garbanzo Bean Stew

Ingredients:

- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 eggplant, diced
- 1 bell pepper, diced
- 2 cups chopped fresh spinach
- 1 can (15 ounces) garbanzo beans, drained and rinsed
- 2 cups diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste

Instructions:

1. Heat the olive oil in a large pot over medium heat.

2. Add the onion, garlic, eggplant, and bell pepper. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.

3. Add the spinach, garbanzo beans, tomatoes, oregano, and basil. Stir to combine.

4. Cover the pot and reduce the heat to low. Simmer for 20 minutes, stirring occasionally.

5. Season with salt and pepper, to taste. Serve warm. Enjoy!
