Garlic and Herb Roasted Chicken Legs

Ingredients:

- 8 chicken legs
- 2 tablespoons butter, melted
- 2 cloves garlic, minced
- 2 tablespoons fresh herbs (such as thyme, rosemary, oregano, or a combination), finely chopped
- 2 tomatoes, chopped
- 1 red onion, chopped
- 1 yellow onion, chopped
- 2 potatoes, peeled and chopped
- 2 cups spinach, chopped
- Salt and pepper, to taste

Instructions:

1. Preheat oven to 375°F.

2. In a large bowl, combine melted butter, garlic, herbs, tomatoes, red onion, yellow onion, potatoes, spinach, salt, and pepper.

3. Place chicken legs in a large baking dish.

4. Pour the vegetable mixture over the chicken legs, making sure to coat them evenly.

5. Bake in preheated oven for 45 minutes, or until chicken is cooked through and vegetables are tender.

6. Serve hot. Enjoy!
