Veggie Tofu Bowl

Ingredients:

-1 block of tofu
-1 cup of white rice
-1/2 cup of quinoa
-1/2 cup of chopped cilantro
-1 bell pepper, diced
-1/2 cup of spinach
-1/2 cup of diced onions
-1/2 cup of diced potatoes
-2 cloves of garlic, minced
-Salt and pepper, to taste
-1/4 cup of Italian dressing

Instructions:

1. Preheat oven to 375 degrees F.

2. Place the tofu on a baking sheet lined with parchment paper. Bake for 20 minutes, flipping halfway through.

3. Meanwhile, cook the white rice and quinoa according to package instructions.

4. In a large bowl, combine the cooked rice and quinoa with the cilantro, bell pepper, spinach, onions, potatoes, garlic, salt, and pepper.

5. Once the tofu is done baking, add it to the bowl and mix everything together.

6. Drizzle the Italian dressing over the bowl and mix until everything is evenly coated.

7. Serve the veggie tofu bowl warm. Enjoy!
