Lemon Garlic Chicken with Rice and Pasta
Ingredients:
- 2 chicken breasts
- 1 cup uncooked white rice
- 1 cup uncooked pasta
- 2 cups sliced mushrooms
- 1 lemon
- 2 tablespoons all-purpose flour
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 cloves garlic, minced
Instructions:
1. Preheat oven to 375 degrees F.
2. In a large skillet, heat the olive oil over medium-high heat.
3. Add the chicken breasts to the skillet and cook for 5 minutes per side, or until cooked through.
4. Remove the chicken from the skillet and set aside.
5. In the same skillet, add the butter and garlic and cook for 1 minute.
6. Add the mushrooms and cook for an additional 3 minutes.
7. Add the flour and stir to combine.
8. Squeeze the juice of the lemon into the skillet and stir to combine.
9. Add the cooked chicken back into the skillet and stir to combine.
10. Transfer the chicken and mushroom mixture to a 9x13 inch baking dish.
11. In a medium saucepan, bring 2 cups of water to a boil.
12. Add the rice and pasta to the boiling water and cook for 10 minutes, or until the rice and pasta are cooked through.
13. Drain the rice and pasta and add to the baking dish with the chicken and mushroom mixture.
14. Stir to combine and bake for 20 minutes, or until the chicken is cooked through.
15. Serve warm. Enjoy!
