Cauliflower and Sweet Potato Gratin

Ingredients:

- 1 head of cauliflower, cut into florets
- 2 large sweet potatoes, peeled and cut into 1/2-inch cubes
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup grated Parmesan cheese

Instructions:

1. Preheat oven to 375°F.

2. Place the cauliflower and sweet potato cubes in a large bowl. Drizzle with olive oil and sprinkle with garlic, salt, and pepper. Toss to combine.

3. Transfer the mixture to a 9x13-inch baking dish. Sprinkle with Parmesan cheese.

4. Bake for 25-30 minutes, or until the vegetables are tender and the cheese is golden brown. Serve warm.
