Sweet Potato and Cucumber Fritters

Ingredients:

-1 large sweet potato, peeled and grated
-1 large cucumber, peeled and grated
-1/4 cup chopped fresh coriander
-2 tablespoons ketchup
-1 large egg
-2 tablespoons vegetable oil
-1 large tomato, diced
-1 large potato, peeled and grated
-1 small onion, diced
-2 cloves garlic, minced

Instructions:

1. In a large bowl, combine the grated sweet potato, cucumber, coriander, ketchup, egg, and vegetable oil. Mix until all ingredients are well combined.

2. Add the diced tomato, grated potato, diced onion, and minced garlic. Mix until all ingredients are evenly distributed.

3. Heat a large skillet over medium-high heat and add enough vegetable oil to coat the bottom of the pan.

4. Using a large spoon, scoop the fritter mixture into the hot oil and flatten slightly. Cook for 3-4 minutes per side, or until golden brown and cooked through.

5. Transfer the cooked fritters to a plate lined with paper towels to absorb any excess oil. Serve warm. Enjoy!
