Chicken Fried Rice
Ingredients:
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 onion, diced
- 1/2 red pepper, diced
- 1/2 green pepper, diced
- 2 cups cooked chicken, diced
- 2 cups cooked white rice
- 1/2 cup frozen peas
- 2 eggs, lightly beaten
- Salt and pepper, to taste
Instructions:
1. Heat the oil in a large skillet over medium-high heat.
2. Add the garlic, onion, and peppers and cook until softened, about 3 minutes.
3. Add the chicken and cook until lightly browned, about 5 minutes.
4. Add the cooked rice and peas and stir to combine.
5. Push the mixture to one side of the skillet and pour the eggs into the other side.
6. Scramble the eggs until cooked through, about 3 minutes.
7. Mix the eggs into the rice mixture and season with salt and pepper.
8. Serve hot. Enjoy!
