Mushroom, Carrot, and Kale Fried Rice

Ingredients:
2 cups cooked white rice
1 cup sliced mushrooms
1 cup diced carrots
1 cup chopped kale
2 cloves garlic, minced
2 tablespoons olive oil
Salt and pepper, to taste

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the mushrooms, carrots, and garlic to the skillet and cook for 5 minutes, stirring occasionally.

3. Add the kale and cook for an additional 3 minutes, stirring occasionally.

4. Add the cooked rice to the skillet and stir to combine.

5. Season with salt and pepper, to taste.

6. Cook for an additional 5 minutes, stirring occasionally, until the rice is heated through.

7. Serve warm. Enjoy!
