Garlic Chicken and Chickpea Skillet

Ingredients:

- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (15 ounces) chickpeas, drained and rinsed
- 1/4 cup chicken broth
- 1/4 cup chopped fresh parsley

Instructions:

1. Heat the olive oil in a large skillet over medium heat. Add the garlic and cook until fragrant, about 1 minute.

2. Add the chicken cubes and season with salt and pepper. Cook, stirring occasionally, until the chicken is cooked through, about 5 minutes.

3. Add the chickpeas and chicken broth and bring to a simmer. Simmer for 5 minutes.

4. Stir in the parsley and serve.
