Chicken and Rice Bowl
Ingredients:
- 2 cups cooked white rice
- 2 boneless, skinless chicken breasts, cut into cubes
- 2 potatoes, peeled and cubed
- 2 tomatoes, diced
- 2 cups shredded lettuce
- 1 green pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the chicken cubes and season with salt and pepper. Cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through.
3. Add the potatoes, tomatoes, green pepper, onion, and garlic to the skillet. Cook for an additional 5-7 minutes, stirring occasionally, until the vegetables are tender.
4. Add the cooked rice to the skillet and stir to combine. Cook for an additional 2-3 minutes, stirring occasionally, until everything is heated through.
5. Serve the chicken and rice bowl in individual bowls, topped with shredded lettuce. Enjoy!
