Chilli Chicken Rice

Ingredients:

- 2 cups of uncooked white rice

- 2 tablespoons of olive oil
- 2 chicken breasts, diced
- 2 cloves of garlic, minced
- 2 tablespoons of chilli powder
- 1 cup of beef stock

Instructions:

1. Heat the olive oil in a large saucepan over medium-high heat.

2. Add the diced chicken and garlic and cook until the chicken is lightly browned and cooked through, about 5 minutes.

3. Add the chilli powder and stir to combine.

4. Add the beef stock and bring to a boil.

5. Add the rice and stir to combine.

6. Reduce the heat to low and cover the pan. Simmer for 15-20 minutes, or until the rice is cooked through and all the liquid has been absorbed.

7. Serve the chilli chicken rice hot. Enjoy!
