Garlic Beef Tournedos with Pumpkin Rice
Ingredients:
- 2 beef tournedos
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 cup uncooked rice
- 2 cups chicken broth
- 1 cup pumpkin puree
- Salt and pepper to taste
Instructions:
1. Preheat oven to 350°F.
2. Heat olive oil in a large skillet over medium-high heat. Add garlic and cook for 1 minute.
3. Add beef tournedos to the skillet and cook for 3-4 minutes per side, or until desired doneness.
4. Remove tournedos from skillet and set aside.
5. In a medium saucepan, combine rice, chicken broth, pumpkin puree, and salt and pepper. Bring to a boil, reduce heat to low, and simmer for 20 minutes, or until rice is tender.
6. Place tournedos in an oven-safe dish and bake in preheated oven for 8-10 minutes, or until desired doneness.
7. Serve tournedos with pumpkin rice. Enjoy!
