Garlic Chicken and Rice

Ingredients:

- 2 cups of uncooked long grain white rice
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 2 boneless, skinless chicken breasts, cut into cubes
- 2 cups of chicken broth
- Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large skillet over medium heat.

2. Add the garlic and cook for 1 minute, stirring constantly.

3. Add the chicken cubes and cook for 5 minutes, stirring occasionally.

4. Add the rice and stir to combine.

5. Pour in the chicken broth and season with salt and pepper.

6. Bring the mixture to a boil, then reduce the heat to low and cover.

7. Simmer for 15-20 minutes, or until the rice is cooked and the liquid has been absorbed.

8. Serve the garlic chicken and rice warm. Enjoy!
