Avocado Egg Toast

Ingredients:

-1 ripe avocado
-2 eggs
-2 tomatoes, diced
-2 cloves garlic, minced
-Salt and pepper, to taste
-2 slices of toast

Instructions:

1. Preheat oven to 375 degrees F.

2. In a small bowl, mash the avocado with a fork until it has a creamy consistency.

3. In a separate bowl, whisk together the eggs, tomatoes, garlic, salt and pepper.

4. Heat a skillet over medium heat and add the egg mixture. Cook until the eggs are scrambled and cooked through, about 5 minutes.

5. Spread the mashed avocado onto the toast slices and top with the scrambled eggs.

6. Place the toast slices on a baking sheet and bake for 10 minutes, or until the toast is golden and the eggs are cooked through.

7. Serve the avocado egg toast warm. Enjoy!
