Tomato Mozzarella Pasta
Ingredients:
- 8 ounces of pasta
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 2 cups of diced tomatoes
- 1/2 cup of vegetable or chicken stock
- 1/2 teaspoon of Italian seasoning
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
- 8 ounces of fresh mozzarella, cubed
Instructions:
1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions. Drain and set aside.
2. Heat the olive oil in a large skillet over medium heat. Add the garlic and cook until fragrant, about 1 minute.
3. Add the tomatoes, stock, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
4. Add the cooked pasta to the skillet and stir to combine.
5. Add the mozzarella cubes and stir until melted.
6. Serve warm. Enjoy!
