Chorizo and Potato Hash

Ingredients:

- 2 tablespoons olive oil
- 1/2 pound chorizo, diced
- 1/2 onion, diced
- 1/2 cup celery, diced
- 1/2 cup mushrooms, diced
- 2 cloves garlic, minced
- 2 cups potatoes, diced
- 1/4 cup blue cheese, crumbled

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the chorizo and cook for 3-4 minutes, stirring occasionally, until it begins to brown.

3. Add the onion, celery, mushrooms, and garlic and cook for another 3-4 minutes, stirring occasionally, until the vegetables are softened.

4. Add the potatoes and cook for 8-10 minutes, stirring occasionally, until the potatoes are cooked through and lightly browned.

5. Remove the skillet from the heat and stir in the blue cheese.

6. Serve the chorizo and potato hash warm. Enjoy!
