Garlic Chicken and Rice Bowl
Ingredients:
2 chicken breasts
2 cups cooked white rice
1 can black beans, drained and rinsed
1 large potato, peeled and diced
1 cup broccoli florets
3 cloves garlic, minced
1 tablespoon olive oil
Salt and pepper, to taste
Instructions:
1. Preheat oven to 375 degrees F.
2. Place chicken breasts in a baking dish and season with salt and pepper.
3. Bake for 25 minutes, or until chicken is cooked through.
4. Meanwhile, heat olive oil in a large skillet over medium heat.
5. Add garlic and cook for 1 minute.
6. Add potato and cook for 5 minutes, stirring occasionally.
7. Add broccoli and cook for an additional 5 minutes.
8. Add black beans and cook for an additional 5 minutes.
9. Add cooked rice and stir to combine.
10. Slice chicken and add to skillet.
11. Season with salt and pepper, to taste.
12. Serve warm. Enjoy!
