Tofu and Spinach Gratin
Ingredients:
- 2 tablespoons butter
- 2 cloves garlic, minced
- 2 cups spinach, chopped
- 1/2 cup crumbled tofu
- 2 tomatoes, diced
- 1/2 cup shredded cheese
- Salt and pepper, to taste
Instructions:
1. Preheat oven to 350°F.
2. In a large skillet, melt butter over medium heat. Add garlic and cook until fragrant, about 1 minute.
3. Add spinach and cook until wilted, about 3 minutes.
4. Add tofu and cook until lightly browned, about 5 minutes.
5. Add tomatoes and cook until softened, about 3 minutes.
6. Transfer mixture to a greased baking dish. Sprinkle with cheese.
7. Bake for 15 minutes, or until cheese is melted and bubbly.
8. Serve warm. Enjoy!
