Steak and Egg Salad

Ingredients:

-2 eggs
-1 steak
-2 tablespoons olive oil
-2 tomatoes, diced
-1 head of lettuce, shredded
-1 onion, diced
-2 spring onions, chopped
-1/4 cup soy milk
-1/4 cup cream
-2 tablespoons butter
-2 cloves garlic, minced

Instructions:

1. Heat a large skillet over medium heat. Add the olive oil and steak. Cook for about 5 minutes per side, or until desired doneness is reached. Remove from heat and set aside.

2. In a medium saucepan, bring the soy milk and cream to a simmer. Reduce heat to low and add the butter and garlic. Simmer for 5 minutes, stirring occasionally.

3. In a large bowl, combine the lettuce, tomatoes, onions, and spring onions.

4. Slice the steak into thin strips and add to the salad.

5. Pour the cream sauce over the salad and toss to combine.

6. In a separate pan, fry the eggs sunny side up.

7. Serve the salad with the fried eggs on top. Enjoy!
