Chicken and Veggie Frittata


- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups diced cooked chicken
- 8 ounces mushrooms, sliced
- 1 cup broccoli florets
- 1 cup spinach leaves
- 6 eggs
- Salt and pepper, to taste


1. Preheat oven to 350°F.

2. Heat olive oil in a large oven-safe skillet over medium heat. Add onion and garlic and cook until softened, about 5 minutes.

3. Add chicken, mushrooms, broccoli, and spinach to the skillet and cook until vegetables are tender, about 5 minutes.

4. In a medium bowl, whisk together eggs and season with salt and pepper. Pour egg mixture into the skillet and stir to combine.

5. Transfer skillet to oven and bake until eggs are set, about 20 minutes.

6. Serve warm. Enjoy!
