Thai Peanut Chicken and Rice
Ingredients:
-4 boneless, skinless chicken thighs
-2 cups of uncooked white rice
-1 cucumber, diced
-1/2 cup of peanuts, chopped
-2 cups of spinach, chopped
-1/4 cup of mayonnaise
-2 tablespoons of butter
-2 cloves of garlic, minced
Instructions:
1. Preheat oven to 375 degrees Fahrenheit.
2. Place chicken thighs in a baking dish and season with salt and pepper. Bake in preheated oven for 25 minutes, or until cooked through.
3. Meanwhile, cook the rice according to package instructions.
4. In a large bowl, combine the cooked rice, cucumber, peanuts, spinach, mayonnaise, butter, and garlic. Mix until all ingredients are evenly distributed.
5. Once chicken is cooked, cut into small cubes and add to the bowl with the rice mixture. Mix until all ingredients are evenly distributed.
6. Serve the Thai Peanut Chicken and Rice warm. Enjoy!
