Chicken and Tomato Pasta
Ingredients:
- 2 boneless, skinless chicken breasts
- 2 eggs
- 1 large tomato, diced
- 1 bell pepper, diced
- 8 ounces of your favorite pasta
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions:
1. Begin by heating the olive oil in a large skillet over medium-high heat.
2. Add the chicken breasts to the skillet and season with salt and pepper. Cook the chicken until it is cooked through, about 5 minutes per side.
3. Remove the chicken from the skillet and set aside.
4. In the same skillet, add the bell pepper and garlic. Cook for 2-3 minutes, stirring occasionally.
5. Add the diced tomato and cook for an additional 2-3 minutes.
6. Crack the eggs into the skillet and scramble them until they are cooked through.
7. Add the cooked chicken back to the skillet and stir to combine.
8. Cook the pasta according to the package instructions. Drain the pasta and add it to the skillet.
9. Stir to combine and season with salt and pepper to taste.
10. Serve the chicken and tomato pasta warm. Enjoy!
