Tomato Rice
Ingredients:
- 1 cup rice
- 2 tomatoes, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons wheat
- 2 tablespoons besan
Instructions:
1. In a large pot, heat 2 tablespoons of oil over medium heat.
2. Add the onion and garlic and cook until softened, about 5 minutes.
3. Add the tomatoes, salt, and pepper and cook for another 5 minutes.
4. Add the rice and wheat and stir to combine.
5. Add 2 cups of water and bring to a boil.
6. Reduce the heat to low and simmer, covered, for 20 minutes.
7. Add the besan and stir to combine.
8. Simmer, covered, for an additional 10 minutes.
9. Remove from heat and let sit for 5 minutes before serving.
