Garlic Chicken and Rice

Ingredients:

- 2 cups of uncooked white rice

- 2 tablespoons of olive oil

- 1 large onion, diced
- 1 red bell pepper, diced
- 2 cloves of garlic, minced
- 1 pound of boneless, skinless chicken breasts, cut into cubes
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper

Instructions:

1. In a large pot, heat the olive oil over medium heat.

2. Add the onion and bell pepper and cook until softened, about 5 minutes.

3. Add the garlic and cook for an additional minute.

4. Add the chicken cubes and season with salt and pepper. Cook until the chicken is cooked through, about 8 minutes.

5. Add the uncooked rice and stir to combine.

6. Add 2 cups of water and bring to a boil.

7. Reduce the heat to low, cover the pot, and simmer for 20 minutes.

8. Remove from heat and let stand for 5 minutes before serving. Enjoy!
