Cheesy Tomato Garlic Chicken Pasta
Ingredients:
- 2 boneless, skinless chicken breasts, cut into cubes
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 can (14.5 ounces) diced tomatoes
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 8 ounces uncooked pasta
- 1 cup shredded mozzarella cheese
Instructions:
1. Heat olive oil in a large skillet over medium-high heat. Add chicken cubes and garlic and cook until chicken is cooked through, about 5 minutes.
2. Add diced tomatoes, oregano, basil, salt, and pepper to the skillet and stir to combine. Reduce heat to low and simmer for 10 minutes.
3. Meanwhile, bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 8 minutes.
4. Drain pasta and add to the skillet with the chicken and tomato sauce. Stir to combine.
5. Sprinkle mozzarella cheese over the top and cover the skillet. Simmer for 5 minutes, or until cheese is melted.
6. Serve hot. Enjoy!
