Chicken Tomato Pasta

Ingredients:

- 2 tablespoons olive oil

- 2 cloves garlic, minced

- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

- 1/2 teaspoon salt

- 1/4 teaspoon black pepper

- 1 (14.5 ounce) can diced tomatoes

- 1/2 cup chicken broth

- 8 ounces uncooked penne pasta

- 1/2 cup shredded mozzarella cheese

Instructions:

1. Heat the olive oil in a large skillet over medium heat. Add the garlic and cook for 1 minute.

2. Add the chicken cubes and season with salt and pepper. Cook for 5 minutes, stirring occasionally.

3. Add the diced tomatoes and chicken broth. Bring to a boil, then reduce the heat and simmer for 10 minutes.

4. Meanwhile, cook the penne pasta according to package directions.

5. Once the chicken is cooked through, add the cooked pasta to the skillet and stir to combine.

6. Sprinkle the mozzarella cheese over the top and cover the skillet. Cook for 3 minutes, or until the cheese is melted.

7. Serve the chicken tomato pasta warm. Enjoy!
