Chicken Parmesan Pasta

Ingredients:

- 2 cups cooked rice
- 2 eggs
- 2 chicken breasts, cut into cubes
- 1 large tomato, diced
- 2 cups cooked pasta
- 1/2 cup shredded cheese
- 1/2 onion, diced
- 2 cloves garlic, minced

Instructions:

1. Preheat oven to 350°F.

2. In a large skillet, heat oil over medium-high heat. Add chicken cubes and cook until lightly browned, about 5 minutes.

3. Add onion and garlic and cook until softened, about 3 minutes.

4. Add tomato and cook until softened, about 2 minutes.

5. Add cooked pasta and cooked rice to the skillet and stir to combine.

6. In a small bowl, whisk together eggs and cheese. Pour over the pasta and stir to combine.

7. Transfer the pasta mixture to a 9x13 inch baking dish.

8. Bake for 25 minutes or until the cheese is melted and the pasta is cooked through.

9. Serve warm and enjoy!
