Spaghetti with Veggies
Ingredients:
- 8 ounces of spaghetti
- 2 tablespoons of butter
- 2 tablespoons of olive oil
- 2 cups of spinach, chopped
- 1 cucumber, chopped
- 2 carrots, chopped
- 4 mushrooms, sliced
- 2 cloves of garlic, minced
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions.
2. Meanwhile, heat the butter and olive oil in a large skillet over medium heat. Add the spinach, cucumber, carrots, mushrooms, and garlic and cook, stirring occasionally, until the vegetables are tender, about 5 minutes.
3. Drain the cooked spaghetti and add it to the skillet with the vegetables. Stir to combine.
4. Serve the spaghetti and vegetables warm. Enjoy!
