Fried Rice
Ingredients:
- 2 cups cooked rice
- 2 eggs
- 1 tomato, diced
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the onion, bell pepper, and garlic and cook until the vegetables are softened, about 5 minutes.
3. Add the tomato and cook for an additional 2 minutes.
4. Push the vegetables to the side of the skillet and crack the eggs into the center. Scramble the eggs and mix them with the vegetables.
5. Add the cooked rice to the skillet and stir to combine.
6. Season with salt and pepper to taste and cook for an additional 5 minutes, stirring occasionally.
7. Serve warm and enjoy!
