BBQ Ribs with Roasted Potatoes
Ingredients:
- 2-3 lbs pork ribs
- 2 large potatoes, peeled and cubed
- 1 large onion, chopped
- 1 large tomato, chopped
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons Worcestershire sauce
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions:
1. Preheat oven to 375°F.
2. Place potatoes in a large bowl and add olive oil, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt and pepper. Mix until potatoes are evenly coated.
3. Spread potatoes onto a baking sheet and bake for 25 minutes, or until potatoes are tender.
4. Meanwhile, place ribs in a large baking dish. Sprinkle with salt and pepper.
5. In a separate bowl, combine onion, tomato, and garlic.
6. Spread onion mixture over ribs.
7. Bake ribs for 1 hour, or until ribs are tender.
8. Serve ribs with roasted potatoes. Enjoy!
